Yes, you can set up a pickup point instead of delivering to specific locations on Shopify after selling to customers. You'll enable a local pickup option for different areas of your Shopify store. Here, the shipping rate is free and can't be changed. You'll have to verify that every order is in stock and once done you can send a notification to the customer that their order is ready for pickup. You'll change the order manually from unfulfilled to fulfilled once the customer picks his/her order.
